Brining

This process has been around for 1000’s of years.  The fact that it isn’t heavily promoted, does not surprise me.  This reminds me that we need to look at our older recipes.  Evaluate them… think about them… try to understand why they worked then, and adopt them to today’s technologies, processes and ingredients. While the process of brining takes a bit of extra effort, the result is well worth the extra attention.
